Dinner Ideas

I have been so frustrated with cooking lately because I feel like I get no help doing it. I don’t bother asking what anyone wants anymore because I get the same answers, either “I don’t know” or hot dogs.

In fact I was so frustrated the other day that I took a notepad and wrote down every dinner choice I could think of off the top of my head. You know what? I came up with almost 70 choices! Nothing fancy, just regular old standbys but we tend to forget some of the classics when we get stuck in a rut right?

This actually helped me a lot. I thought I would post what I came up with in the hopes of giving you some ideas too:

  1. Oh, I understand your frustration! My frustration, due to strict COVID restrictions, comes from not being able to take the easy option and eat out. Not that we did it much in the Olden Days, but it was an escape hole!
One of favourite meals at the moment is to roast vegetables, and in the last 10 minutes, add a couple of pieces of salmon. When it is all cooked, break the salmon over the veggies and drizzle with a dressing. I use a mixture of yoghurt and mayonnaise, and sometimes soy sauce. If I am feeling particularly fancy I will put it onto a bed of spinach leaves and/or cook up some peas, asparagus etc. Of course the protein can be changed ~ chicken, tofu, red meat, none. It’s one of those dishes that is maximum reward for minimum effort!
