I have been all over the place with meals the last few weeks and have been experimenting with a new diet for myself. I hate calling what I eat a diet but hey, that’s what it is, right?
I have been eating the Mediterranean diet the last 2 weeks. I wanted to eat healthier, but flavorful food was a big requirement for me. Eating Mediterranean always appealed to me because of the fresh ingredients and there was an episode of The Chosen that showed what they were eating and that was exactly how I wanted to be eating.
Here are a few things I have eaten in the last 2 weeks.




Now you say, what about getting my husband and son eating this way? It’s much easier to get my son to eat healthier. He loves a healthy diet but since he is weight training he definitely needs a lot of protein and he wants carbs too.
My husband is the tougher one. He is a junk food junkie. When I first met him, he was all meat and potatoes and pizza and wings and very little fruits and veggies. When he told me what he ate when he was young and also what he ate when he was newly married (the first time) I vowed (as his second wife) to rework his diet and change his mind about eating healthier. One can not eat frozen chicken pot pies, PBJ, and pizza and live well into their 80s. Though somehow, my in-laws lived into their 80s, but sadly, they both developed dementia. I am praying that my husband’s change in diet for the last 15 years will help stave off any potential dementia.
Groceries, since my last update totaled $603.
For Mother’s Day this year, my son cooked for dinner for us, and with the list I gave him, he did my weekly grocery shopping for me. What a great day! I didn’t have to cook or grocery shop! Win, win!

I think that’s a great idea and I hope you can coax the husband into joining in! I’ve always thought some people mostly miss out on healthy options out of laziness or habit, perhaps if you can find quick and tasty dishes you could change his mind. What you had looks very nice! We are not very healthy foodies either, but we try to think of dishes we haven’t had in a while and change things up so that we eat a bit of everything. Both of us cook, usually alternatively as we’re both working, and since we cook differently, we have our “specialty dishes” shall we say… I’m the one who makes Bolognese, he’s the one who’ll make chili con carne. One thing I can recommend is dishes where you can “throw” in more veggies without them really interfering, like peas in a risotto or lentils with mince meat (in chili, stews or pies) which serve two functions : acts as padding,making more servings on the cheap, and sneaks in more vitamins and fibre without much change to the taste or texture.

Excellent advice! Yes, the Hubs eats a lot better now. Even likes Brussel sprouts but some times he can be a challenge. He still hasn’t learned that chicken wings will not make him feel good at the end of the night. You are lucky you both cook. It is such a help when you each have specialties and can contribute to the cooking load. 🙂

I do all the cooking in our home. My husbands diet is very much like your husbands but throw in fast food and no self control with sweets. I usually have two different meal preps with mine like your new diet plan. I can get nice salad dishes and lots of salmon into his diet which helps. What a nice mothers day treat with your son cooking!!!!

We have always been pretty much cook from scratch, but now DH is working towards an anti-inflammatory diet, so no sugar, more veggies, turmeric, ginger, and less dairy. I am looking at doing a harmone reset diet this summer, which is lots of greens, and no dairy or gluten for several weeks. I am not real excited about that but after the stress when DH was sick, I am still not sleeping well, so it’s time to adjust something. They are now calling Alzheimer’s type 3 diabetes, so you are smart to work on changes now.
